Flaky homemade sweet biscuits topped with warm roasted peaches and their syrup, then finished with whipped cream, yogurt, or vanilla ice cream for an easy summer dessert.

Instructions
Heat the oven to 400°F. Line a rimmed baking sheet with parchment, or use a shallow baking dish for the peaches.
Toss the peach wedges with brown sugar, melted butter, lemon juice, vanilla, cinnamon, and salt. Spread them in a single layer.
Roast fresh peaches for 20 to 25 minutes, stirring once, until tender and syrupy. For canned peaches, roast 12 to 15 minutes. Set aside while baking the biscuits.
In a large bowl, whisk flour, baking powder, sugar, and salt. Add cold butter and work it in with your fingers or a pastry cutter until the mixture has pea-sized pieces.
Pour in the cold cream or buttermilk. Stir gently until a shaggy dough forms. Add one extra tablespoon of dairy only if the dough looks very dry.
Turn the dough onto a lightly floured surface. Fold it over itself two or three times, then pat into a 1-inch-thick slab.
Cut into 8 biscuits. Place them on a parchment-lined baking sheet. Brush the tops with cream and sprinkle with coarse sugar if using.
Bake for 14 to 17 minutes, until the tops are golden and the centers are cooked through.
Split warm biscuits, spoon roasted peaches and syrup over them, and finish with cream, yogurt, or ice cream.
Notes
Use ripe summer peaches for the best flavor. Canned peaches can be substituted and require a shorter roasting time. Serve warm with whipped cream, vanilla ice cream, Greek yogurt, or fresh cream.
