Ingredients
  

  • 8 oz cream cheese, softened
  • 1.5 cups red velvet cake crumbs or crushed red velvet cookies
  • 0.5 cup fresh strawberries, finely diced and blotted dry
  • 0.5 cup powdered sugar
  • 10 oz white or dark chocolate, melted

Method
 

  1. In a large bowl, mix softened cream cheese with red velvet crumbs and powdered sugar until smooth.
  2. Gently fold in the finely diced strawberries, taking care not to overmix.
  3. Scoop small portions of the mixture and place on a parchment-lined tray. Chill for 30 minutes.
  4. Roll chilled portions into smooth balls and return to the fridge while preparing chocolate.
  5. Dip each truffle into melted chocolate, let excess drip off, and place back on parchment.
  6. Chill until the chocolate is fully set. Serve chilled.

Notes
