- In a large bowl, mix softened cream cheese with red velvet crumbs and powdered sugar until smooth.
- Gently fold in the finely diced strawberries, taking care not to overmix.
- Scoop small portions of the mixture and place on a parchment-lined tray. Chill for 30 minutes.
- Roll chilled portions into smooth balls and return to the fridge while preparing chocolate.
- Dip each truffle into melted chocolate, let excess drip off, and place back on parchment.
- Chill until the chocolate is fully set. Serve chilled.
