Spinach & Cheese Stuffed Chicken Breast

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 3 cups fresh baby spinach (lightly sautéed)
  • 2 cloves garlic, minced
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • salt and pepper, to taste
  • toothpicks, for sealing

Method
 

  1. Preheat the oven to 375°F (190°C). Pat the chicken breasts dry with paper towels.
  2. Use a sharp knife to cut a deep pocket into the side of each chicken breast without cutting all the way through. Season the chicken with salt and pepper inside and out.
  3. In a bowl, combine sautéed spinach, minced garlic, cream cheese, and mozzarella until evenly mixed.
  4. Stuff each chicken pocket with the spinach mixture, using toothpicks to secure the edges if needed.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts 2–3 minutes per side until golden brown.
  6. Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Remove toothpicks, let rest for 5 minutes, then serve warm. Garnish with extra spinach or herbs if desired.

Notes

For best results, don’t overstuff the chicken to prevent filling from spilling out. Use toothpicks to secure the edges and always check for an internal temperature of 165°F before serving. Try swapping mozzarella for feta or Swiss for new flavor twists.
