  • 2 Japanese sweet potatoes (Satsumaimo)
  • 1 tsp olive oil (optional)
  • 1 pinch sea salt

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the Japanese sweet potatoes clean and pat dry. Leave the skin on.
  3. Poke each potato a few times with a fork to allow steam to escape.
  4. Place the potatoes directly on a baking sheet or wrap loosely in foil.
  5. Roast for 45–60 minutes, until the skin is wrinkled and the inside is soft and fluffy.
  6. Slice open, season lightly with salt or olive oil if desired, and serve warm.
