Ingredients

  • 3 cups fresh pineapple chunks
  • 1 large English cucumber, sliced
  • 2 tablespoons fresh lime juice
  • 6-10 leaves fresh mint leaves
  • 1 1/2 cups cold water or coconut water
  • 1-2 cups ice
  • 1-2 teaspoons honey or maple syrup (optional)

Instructions

  • Add the pineapple chunks, sliced cucumber, lime juice, mint leaves, cold water, and 1 cup of ice to a blender.
  • Blend until smooth and fully combined.
  • Taste the Pineapple Cucumber Refresher. Add honey or maple syrup only if the pineapple needs more sweetness.
  • For a smooth drink, pour the mixture through a fine mesh strainer into a pitcher. For a thicker smoothie-style drink, skip straining.
  • Serve immediately over ice.
  • Garnish with cucumber ribbons, pineapple wedges, lime slices, or fresh mint.

Notes

Use frozen pineapple for a frostier drink. Add sparkling water after blending for a fizzy refresher. For the brightest flavor, serve the Pineapple Cucumber Refresher the same day you make it. If using regular cucumber, peel it first if the skin tastes bitter.
Storage: Store leftovers in a covered pitcher in the refrigerator for up to 24 hours. Stir well before serving because natural separation may happen.
