Ingredients

  • 4 large fresh peaches, peeled and sliced
  • 2 cups fresh strawberries, hulled and halved
  • 3 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 6 tbsp cold unsalted butter, cubed
  • 1/4 tsp salt

Instructions

  • Preheat the oven to 350°F (175°C). Lightly butter a 9x13-inch baking dish or equivalent oven-safe dish.
  • Place the sliced peaches and halved strawberries into a large mixing bowl.
  • Add the granulated sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Toss gently until the fruit is evenly coated.
  • Pour the fruit mixture into the prepared baking dish and spread into an even layer.
  • In a separate bowl, combine the rolled oats, flour, brown sugar, and salt.
  • Add the cold cubed butter and work it into the dry ingredients using your fingers or a pastry cutter until crumbly.
  • Scatter the crumble topping evenly over the fruit without pressing it down.
  • Bake for 35 to 40 minutes until the topping is golden brown and the fruit filling is bubbling around the edges.
  • Remove from the oven and let the crumble rest for at least 10 minutes before serving.
  • Serve warm with vanilla ice cream, whipped cream, or Greek yogurt if desired.

Notes

Use ripe fresh peaches and strawberries for the best flavor. Frozen fruit can also be used — thaw and drain well before baking. Keep the butter cold for a crunchy topping. Let the crumble rest for at least 10 minutes before serving so the filling thickens properly. Delicious with vanilla ice cream, whipped cream, or Greek yogurt.
