Ingredients
  

  • 2 tbsp unflavored gelatin
  • 1.5 cups strawberries (fresh or frozen)
  • 0.5 cup plain Greek yogurt
  • 2 tbsp honey or stevia (optional)
  • 1 cup hot water (not boiling)
  • 1 splash lemon juice

Method
 

  1. Dissolve the unflavored gelatin in hot water, stirring until completely smooth with no lumps.
  2. In a blender, combine strawberries, Greek yogurt, sweetener, and lemon juice. Blend until creamy.
  3. Pour the dissolved gelatin into the blender and pulse briefly to combine.
  4. Pour the mixture into molds or a glass dish.
  5. Refrigerate for 2–3 hours, or until fully set.
