Ingredients
  

  • 2 tbsp unflavored gelatin
  • 2 cups filtered water
  • 1 tbsp fresh lemon juice
  • 1 tsp ginger juice or powder (optional)
  • 1–2 scoops collagen peptides (optional)
  • 1 tsp honey or monk fruit sweetener (optional)

Method
 

  1. Heat 1 cup of water in a small saucepan until steaming but not boiling.
  2. Whisk in the unflavored gelatin and stir continuously until fully dissolved.
  3. Add lemon juice, optional ginger, collagen peptides, and sweetener if using. Stir well.
  4. Remove from heat and stir in the remaining 1 cup of cold water to cool the mixture.
  5. Pour the mixture into ramekins or a glass dish.
  6. Refrigerate for 4–6 hours or overnight until fully set.
