Method
- Heat 1 cup of water in a small saucepan until steaming but not boiling.
- Whisk in the unflavored gelatin and stir continuously until fully dissolved.
- Add lemon juice, optional ginger, collagen peptides, and sweetener if using. Stir well.
- Remove from heat and stir in the remaining 1 cup of cold water to cool the mixture.
- Pour the mixture into ramekins or a glass dish.
- Refrigerate for 4β6 hours or overnight until fully set.
