This Doritos casserole is an easy Tex-Mex inspired comfort dish made with seasoned ground beef, a creamy cheesy filling, and crushed nacho cheese Doritos baked until bubbly and golden.

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2–3 tbsp water (to mix with taco seasoning)
  • 1 can cream of chicken or cream of mushroom soup (10.5 oz)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 large bag nacho cheese Doritos (crushed, divided)

Method
 

  1. Preheat the oven: Set oven to 350°F and lightly grease a 9x13-inch baking dish.
  2. Brown the beef: Cook ground beef over medium heat until no pink remains. Drain excess grease. Stir in taco seasoning and a small splash of water; simmer 3–4 minutes.
  3. Make the creamy mixture: In a large bowl, combine soup, sour cream, and 1 cup shredded cheese until smooth. Fold in the seasoned beef.
  4. Layer and bake: Spread crushed Doritos on the bottom of the dish. Add half the beef mixture and sprinkle with cheese. Repeat layers. Finish with extra cheese and a light layer of crushed Doritos on top. Bake uncovered 20–25 minutes until melted and bubbly. Rest 5–10 minutes before serving.

Notes

Tips: Drain the beef well so the casserole doesn’t get greasy. For extra crunch, add a fresh handful of crushed Doritos during the last 5 minutes of baking. Let the casserole rest 5–10 minutes before serving for cleaner slices.
Variations: Swap beef for 2–3 cups shredded rotisserie chicken. Add 1/2 cup black beans, 1/2 cup corn, or a few spoonfuls of salsa for a taco-style twist. Try Cool Ranch Doritos for a tangier flavor.
Storage: Cool completely, cover tightly, and refrigerate up to 3 days. Reheat at 325°F until warmed through; add crushed Doritos on top to bring back crunch.
