Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 1.5 cups granulated sugar
  • 0.5 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 3 cups freshly grated carrots
  • 0.5 cup crushed pineapple (optional)
  • 0.5 cup chopped walnuts (optional)

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, beat together granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  4. Fold the wet ingredients into the dry ingredients gently until just combined.
  5. Stir in grated carrots and optional pineapple or nuts.
  6. Divide batter evenly between prepared pans and bake for 30–35 minutes, until a toothpick inserted comes out clean.
  7. Allow cakes to cool completely before frosting with cream cheese frosting.
