- In a medium bowl, dissolve the Jello mix in ¾ cup boiling water, stirring for about 2 minutes until fully dissolved.
- Immediately stir in the mini marshmallows until slightly melted and well combined.
- Refrigerate the mixture for 1–1½ hours until thick but still scoopable.
- Scoop small portions and roll into balls using slightly damp hands.
- Roll each ball in shredded coconut until fully coated.
- Chill for an additional 30 minutes before serving so the balls firm up completely.
