Ingredients

  • 1/2 cup fresh blueberries, plus more for garnish
  • 10 to 12 fresh mint leaves, plus extra sprigs for garnish
  • 2 ounces fresh lime juice
  • 1 to 2 ounces simple syrup, to taste
  • 2 cups ice
  • 1 1/2 to 2 cups sparkling water, club soda, Sprite, or Schweppes club soda
  • lime wheels, for garnish

Instructions

  • Add the blueberries, mint leaves, lime juice, and simple syrup to a sturdy glass or cocktail shaker.
  • Gently muddle until the blueberries burst and the mint smells fresh. Don’t crush the mint too hard, or it may taste bitter.
  • Divide the muddled mixture between two serving glasses.
  • Fill each glass with ice.
  • Top with sparkling water, club soda, Sprite, or Schweppes club soda.
  • Stir gently from the bottom to mix the blueberry flavor through the drink.
  • Garnish with extra blueberries, a lime wheel, and a fresh mint sprig.
  • Serve the Blueberry Mojito Mocktail right away while cold and fizzy.

Notes

For a sweeter Blueberry Mojito Mocktail, use Sprite or add extra simple syrup.
For a lighter, less sweet drink, use plain sparkling water and add a little extra lime juice.
For a pitcher, multiply the recipe by 4. Muddle the blueberries, mint, lime juice, and syrup first, then add ice and bubbles right before serving.
Optional Blueberry Mojito Mocktail Syrup: Simmer 1 cup blueberries, 1 cup water, and 1 cup sugar for 5 minutes. Mash, strain, cool, and use in place of simple syrup for a deeper blueberry flavor.
