- Add the apple peels to a crock pot or saucepan and cover with water.
- Add cinnamon sticks, lemon slices, and a splash of apple cider vinegar.
- Simmer on low for 2–3 hours in a crock pot, or 30–45 minutes on the stovetop.
- Strain the liquid and discard or compost the peels.
- Serve warm or chilled. Add more lemon or cinnamon if desired.
